How do I scale a recipe to a different dose?

Scaling multiplies the dose, the target and every cumulative pour target by the same factor, so the schedule keeps its proportions.

Are these recipes standards?

No. They are repeatable baselines authored by CupTune. Grinder, roast, water and equipment all change the result, which is why each page says what it cannot guarantee.

Which recipe should I start with?

Pick the one matching the brewer you own. If you have several, the pour over and French press baselines are the most forgiving places to establish a repeatable process.
